Frying mushrooms is one of the simplest ways to bring out their delicious, earthy flavour. They’re perfect loaded on a steak, added to a creamy risotto or bringing a salad to life. Although frying them may seem deceptively simple, we have compiled the best tips and tricks to ensure you achieve the perfect mushroom every time.

  1. Clean and completely dry the mushrooms, then begin to slice mushrooms in desired style. Try not to cut slices too thinly, or they’ll reduce in size too much when cooking.
  2. Heat the oil or butter in the pan on a medium-high heat. Wait until it’s sizzling, then add the mushrooms to the pan.
  3. Add the mushrooms and let them cook without stirring. Try to resist any stirring for the first 5 minutes.
  4. Once you begin to see golden edges and no more liquid, give the mushrooms a quick stir. The mushrooms will begin to turn a dark reddish-brown with golden spots.
  5. Add your seasoning at this stage. This can include salt, pepper, garlic, fresh herbs, or even a little more butter if you’re feeling indulgent. Remove from the pan and serve.


Tip 1: Clean your mushrooms


There is much debate on whether mushrooms should be washed before cooking. We find the best and easiest technique is to dampen a tissue and give the mushrooms a little wipe before chopping. This way the mushrooms don’t absorb too much water and are clean before cooking.

Tip 2: Cook in large frying pan


You don’t want your mushrooms too close together when frying as the lack of space will cause the mushrooms to boil in their own water. Space them out and cook in batches to ensure perfect mushroom texture.

Tip 3: Keep a high heat


Don’t go too hot as you don’t want to burn the mushrooms, but keep them high enough to make sure the mushrooms get a good searing. A medium/high heat is best.

Tip 4: Choose your oil wisely


For a healthier option, use extra virgin olive oil to fry your mushrooms. If you’re in the mood for a little indulgence, use a knob of butter instead.

Tip 5: Don’t constantly stir


Resist the urge to move mushrooms around the pan constantly. This will ensure all their water is released and you’ll create a great seared mushroom every time.
